EDIT: Good news! The UK has a reciprocal agreement with Australia

It’s dependent on the details of the reciprocal deal with your country, not the NHS. Your own government reimburses the NHS for any costs incurred by you.
Travelling on an Italian passport will not provide you with any benefits, health or otherwise, because you have not been habitually resident in any EU country and not worked and paid into its state scheme. ‘Nothing in – nothing out’ is the general rule. You will therefore have to rely on the agreement with Australia.
Make sure you understand exactly what you will be covered for. For instance, some countries do not cover their citizens for pre existing conditions, or you may have to pay for prescriptions privately.
